Spinach Quiche Sans Crust

Yield: 1 Servings

Ingredients and directions for this recipe

1 pk Frozen chopped spinach
3 oz Grated fat free cheese or
-nondairy cheese-monteray
-Jack or cheddar style (up
-to 4)
2 Cloves minced garlic
-(optional)
1/4 ts Freshly ground black pepper
-(optional)

TOPPING
6 Egg whites
3/4 c Homemade bisquick (recipe to
-follow)
1 1/2 c Skim milk or plain soy milk

Thaw spinach and mix n garlic and pepper, if using. Sprinkle with cheese.
Mix together topping ingredients and beat well. Pour over spinach cheese
mixture and mix together. Pour into a pie plate lightly with pam style
spray. Bake at 400o for 30 to 35 minutes.
